One of my favorite people in the world is Shannon Ralph. I met her when I was her long-term substitute after Paul and I moved to Kansas. She is the Kansas Teacher of the Year 2015 and after carefully watching her I'm a better teacher and a better person. To thank her for making my first few months in Kansas a great experience Paul and I invited her and her husband over for dinner for some down home Southern cooking. She was a little scared.
Here's what I cooked and served:
fried chicken, black eyed peas, turnip greens spiked with Jack Daniels whiskey and brown sugar, cooked cabbage, squash casserole, jambalaya, cornbread, no knead bread with honey, sage butter and garlic butter on the side, homemade pimento cheese with quick pickles, chow-chow, pickled okra and sliced tomato on the side, unsweet tea, sparkling wine and coffee to drink and for dessert Mississippi mud cake, pecan pie and key lime pie. It was a delicious feast that I can't wait to make again.
